You may need to add a little more salt to the squash. I prefer to keep it light on the salt to taste more of the simple squash flavor but each taste is different.
If you don't care for squash seeds, try adding toasted nuts. Pecans, walnuts, almonds, pine nuts would all be good choices for this recipe.
Some folks really dislike cilantro. If that's the case for you, try substituting basil instead.
