Simple Delicata Squash With "Butter", Lime & Cilantro
A simple yet delicious side dish that features the delicata squash while adding a sauce that is rich, tangy and spicy. Add a few roasted squash seeds to create a perfect combination of textures.

  1. Preheat the oven to 400 degrees.
  2. Slice the rinsed squash in half long ways and scoop the seeds out with a spoon. Keep the seeds.
  3. Place the squash face down on a cookie sheet into the oven and cook for 20-30 minutes. Squash will be done when a fork is easily inserted into the squash. The skin will also begin to brown.
  4. As the squash is cooking, rinse 1/4 cup of the seeds and sprinkle with 1/2 a teaspoon of season salt.
  5. Bake the seeds in a 400 degree oven for 5 minutes. Keep a close eye on the seeds so they don't burn. They will start to look dried out and golden.
  6. To make the sauce, melt the 2 tablespoons of butter with the 1 teaspoon maple syrup and pinch of cayenne pepper.
  7. Add the lime juice and the 1/4 cup chopped cilantro and mix.
  8. Once the squash are finished cooking, gently run a fork down the middle to loosen the flesh.
  9. Pour 1/4 of the "butter" sauce on each squash boat. Top with some of the roasted seeds.
  10. Serve immediately.
Recipe Notes

You may need to add a little more salt to the squash.  I prefer to keep it light on the salt to taste more of the simple squash flavor but each taste is different.

If you don't care for squash seeds, try adding toasted nuts.  Pecans, walnuts, almonds, pine nuts would all be good choices for this recipe.

Some folks really dislike cilantro.  If that's the case for you, try substituting basil instead.

Make sure to keep an eye on the squash and the seeds.  They cooking times vary based on size and quantity so be ready to adjust if necessary.
