QUINOA SALAD BASE
A refreshing quinoa salad that can be altered or eaten as is. It is light and nutritious and full of fresh raw veggies.

Instructions
  1. Cook quinoa per instructions on the package or in a rice cooker.
  2. Allow cooked quinoa to cool for at least 1 hour.
  3. Chop 4 cups of an assortment of veggies and add to the cooled quinoa.
  4. Add 1/2 cup extra virgin olive oil and 1/2 cup apple cider vinegar and stir until well mixed.
  5. If time allows, let the salad mixture sit overnight or a few hours.
  6. Add any additional flavor combinations.

Suggested flavor combinations:

Mexican:

-2 cups prepared quinoa salad base

-Add 1/2 cup corn

-1/2 cup cooked beans

-juice of 1/2 a lime

-1/2 cup chopped cilantro

1 tablespoon taco seasoning

 

Tabbouleh:

-2 cups prepared quinoa salad base

-1/2 cup chopped parsley

-1/2 cup chopped mint

-1/2 chopped red onion

 

Dill Summer Salad:

-2 cups prepared quinoa salad base

-1 tablespoon fresh chopped dill

-juice of 1/2 a lemon
