Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a mixer or medium bowl add coconut oil, sugar, applesauce, and cocoa powder and stir until well combined.
  3. Blend in salt, baking soda, vanilla, flour and flax meal and mix taking time to scrape the sides and bottom of the bowl.
  4. Add the dark chocolate chips and fresh chopped mint and stir just enough to evenly distribute throughout the dough.
  5. Place a heaping teaspoon of cookie dough on the cookie sheet about an inch apart.
  6. Bake in the preheated oven for 10 minutes.
  7. Allow cookies to cool 3-4 minutes on the cookie sheet then transfer them to a cooling rack.
