LEMON ICE

Instructions
  1. Juice lemons, including pulp to yield 2 cups careful to remove seeds.
  2. Add 2 1/2 cups water and 1 cup maple syrup.
  3. Use the medium grate to produce 1/4 cup lemon peel.
  4. Combine the peel to the other liquids and mix.
  5. Cover and place in the fridge.
  6. If using an ice cream maker, follow the instructions of the machine.
  7. After 20 minutes, transfer covered liquid to the freezer.
  8. Stir every hour until it is frozen evenly and ready to use.
Recipe Notes

When I made this, I wanted to try freezing it in a bowl.  I read on line that the more you stir it, the lighter it will be as you are adding air each time you stir.  I decided to use my hand held immersion blender.  It created a shaved ice texture that was just perfect for this drink.

If you aren't crazy about bigger sized lemon peel, simply add all ingredients to the blender and blend for a minute before transferring to a bowl.  That way you still get the flavors but not the texture.
