These cookies are perfect for making ice cream sandwiches. They are thin and crisp yet slightly chewy in the center. When making the ice cream sandwiches I pair like sized cookies together after they are cool to make sure I've got compatible cookies. Next I add softened ice cream (just set it out on the counter a few minutes before you start). I try to make the ice cream cookies about an inch thick and filled to the edge. If you love treats as much as me, indulge in some chocolate sprinkles on the outside as well. Do this by placing about a cup of sprinkles on a flat plate. Slowly roll the filled ice cream sandwich so the sprinkles stick to the ice cream. This would also work with chopped nuts.
These cookies also freeze really well. I could even tell you that they are delicious when eaten frozen.
