This carrot top chimichurri can be used several ways. Here are some ideas:

Cover vegetables and grill them in a foil packet, add 1/2 cup of the chimichurri to a block of cubed tofu and fry until crispy, add some to rice with fresh veggies and serve as a grain salad, use on sandwiches, or use as a dip for fresh veggies.

If you like a little spice, add hot pepper flakes to taste or a pinch of cayenne pepper.
