The sun is shinning in Sunnyvale CA -finally. It’s been a few weeks of dark clouds and rain but finally the warm sun is inviting us to shed our layers. The afternoon rays are enough to bring back memories of our time living in Atlanta GA. Although we are no where near the temperatures of Hotlanta, it makes me think of a memory I have of holding my 4 month old baby in the shade of a peach tree, taking a break from picking 2 bushel baskets full. I loved picking peaches not only because it’s so fast to fill the baskets but also, because a peach picked right off the tree is like biting into sugar filled sunshine!
As soon as I saw peaches in the grocery store, I just had to try this recipe I was rolling around in my head. I love the combination of ginger and peach and felt like the fresh thyme added was the frosting on the cake. I actually tried this recipe (with no complaints from my husband, Ben) several different ways.
The first way, I blended the peaches with the thyme and ginger and then strained the mixture to eliminate the pulp. Then I added that to the ginger beer, peach schnapps and vodka. It was so smooth and delicate while keeping the sharpness of the ginger beer. After talking with a good friend about this recipe, we agreed that not everyone would be willing to strain the fruit-herb mixture. We decided muddling it in a drink shaker and straining would be more realistic. For this method, it’s important to choose (or painfully wait for) ripe peaches.
After perfecting the recipe, I just had to buy the Moscow mule copper mugs! I just love they way they feel and keep the drink nice and chilled, perfect while relaxing on the porch swing. It is not a necessity but it sure helps to set the mood.
